Vegan Rice Krispies

Okay so Rice Krispie treats are ALMOST vegan to begin with so this is sort of cheating. If you can't do soy products, turn back now, soy butter is our dairy substitute in this recipe. Also they certainly aren't healthy so if you came here looking for something that won't make you fat if you eat the whole batch then sorry to disappoint! We love good vegan recipes in our household because it means the whole family can eat it. I end up doing A LOT of modifying meals to accommodate the boys allergies. Connor is allergic to peanuts, sesame, and tree nuts, while Braden is allergic to peanuts, tree nuts, dairy, and eggs. Each meal I almost always have to make modifications for each kid. Dessert is especially rough for Braden. I haven't had much luck with baking recipes that don't use egg, dairy, or nut products. Also it's a lot of work to make these things from scratch just to have the boys refuse to even try it because they're toddlers and feeding toddlers is an exercise in futility. But these have been a hit and they're super easy.

  • 1 bag marshmallows (10 ounce)
  • 6 cups Rice Krispie cereal
  • 3 tablespoons Earth Balance Vegan Butter (contains soy)
  • Pilsbury double fudge frosting (contains soy) (optional)
  • Sprinkles (optional)

  1. Melt butter in large saucepan on low
  2. Add marshmallows and stir frequently until melted
  3. Add Rice Krispie cereal until mixed
  4. Spoon mixture into greased or lined pan
  5. Press mixture into pan until evenly spread
  6. Let cool in fridge
  7. Spread frosting evenly over cooled Rice Krispie treats
  8. Add sprinkles
  9. Let frosting firm up briefly before cutting
  10. Enjoy!

Easy right? It's literally the basic Rice Krispie recipe with non-dairy butter ;) If you have other awesome vegan dessert recipes let me know in the comments!!
